triglyceride

  • /tɹaɪˈɡlɪsəɹaɪd/

noun triglycerides

  1. A lipid, an ester of glycerol and three fatty acids (the same or different); the major constituent of animal and vegetable fats. The triglycerides found in fish oils are rich in cis-conformation omega-3 fatty acids, making them wrinkled-looking in this sort of diagram because the carbon chains keep changing direction at each cis double bond.
